Among all the various flavors that coffee has, isn’t it sweetness that everyone likes best?
For this reason, producers are researching new varieties, growing and harvesting methods to produce higher-sweetness coffee cherries are being used,
and recently, various fermented processing methods were introduced.
I chose SIDRA, which nicely delivers this sweetness, for my very first selection.
The Sidra variety first began in Ecuador and is a hybridization variety of bourbon and typica.
It is the same variety that I used at the 2019 WBC performance.
Producer Sergio Gonzalez strives for sustainability in the production of specialty coffee rather than for increasing production.
I hope people all over the world can enjoy Ecuadorian coffee through this.
